 Batter                                                                              Filling

¼ cup melted butter or margarine                           ¾ lb Farmer or dry cottage cheese

1 egg                                                                                  1 egg

½ cup sugar                                                                   2 Tbsp. sugar

1 cup flour                                                                        2 tsp. milk

1 ½ tsp. baking powder                                               ¼ tsp. lemon juice

2 tsp. milk

1 tsp. vanilla

 

Beat butter, egg and sugar until fluffy.  Combine flour and baking powder and add slowly, continually beating (by hand or mixer) to egg mixture.  Add milk mixed with vanilla.  Spread half of this mixture into greased ” square baking pan (Pyrex preferred).

 

Combine all of the filling ingredients and mix well.  Spread with spatula over base batter.  Cover with remaining batter.

 

Bake in preheated 350° degree oven for 30 minutes.  Serve warm with sour cream or  fruit.
