Cheese Latkes

 

3 large eggs lightly beaten

1 cup milk

1 cup dry pot cheese

1 cup flour

1 tsp. baking powder

1 tsp. sugar

1 tsp. cinnamon (optional)

Oil or butter for frying

 

In large mixing bowl, beat the eggs until frothy.  Add the milk and cheese and beat until well blended.  Combine the dry ingredients and stir into the cheese mixture.  Drop by tablespoons into large hot frying pan greased with oil or butter.  Fry until brown on both sides and serve with jam, syrup, sour cream or a sprinkling of cinnamon sugar.
