Happy Hanukkah! Here is Bubbe Libby’s latke recipe in her own hand. She always made them in a plug in electric frying pan and had an array of paper bags covered in paper towels to drain the oil from the finished product. She also grated by hand using a box grater (always got a little bit of herself into the mix too). These are deliciously crispy around the edges and creamy/chewy in the middle, the way all the best food is!
