Another of Bubbie’s recipes given to my mom, Sadie. I make this for Rosh Hashanah. Enjoy!
Mom’s Honey Cake
Cooking time: 1 hour
Preheat oven to: 350°
2 glasses sugar (cups, I use less)
5 or 6 eggs, separated
mix yolks and sugar
Beat egg whites, and add to eggs and sugar. Mix well. Add: 1 pound melted honey (2 cups), 2 teaspoons of baking soda, 1 teaspoon each of nutmeg, cinnamon, cloves
4 teaspoons baking powder
5 glasses (cups) flour
2 Tablespoons oil
1 glass (cup) strong black coffee
1 glass (cup) seltzer or you can just use the coffee (2 glasses) chopped walnuts or almonds ( I use almonds). Pour into 3 loaf pans 3.5 x 5 lined with waxed paper and top with whole almonds.
Bake for 1 hour or longer depending on your oven.
